Ingredients

The gnocchi

  • 2 medium russet potatoes
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • cup all purpose flour

The kale sauce

  • 2 tablespoons olive oil
  • 2-3 cloves garlic
  • ½ bunch Lacinato kale
  • 1 ½ tablespoons nutritional yeast
  • 1 tablespoon light miso
  • 2 teaspoons fresh lemon juice
  • to taste sea salt
  • to taste ground black pepper
  • kale/gnocchi cooking water

Instructions

  1. Preheat the oven and bake the potatoes until tender.
  2. Let the potatoes cool slightly and then peel them.
  3. Grate the potatoes using a box grater and spread them out to cool completely.
  4. Sprinkle salt, drizzle olive oil, and add flour to the cooled potatoes, then mix to form a smooth dough.
  5. Cut the dough into portions, roll into logs, and cut into pieces, then shape the gnocchi.
  6. Prepare the kale sauce by boiling kale in water, then blending it with garlic, nutritional yeast, miso, lemon juice, and seasoning.
  7. Boil the gnocchi until they float, then combine with the kale sauce and serve.
