Vegan Gnocchi

Instructions
- Mix all ingredients in a bowl until a dough forms.
- Divide the dough into 4 parts and roll each into long pieces about ½ to ¾ inch thick.
- Cut the rolled dough into 1 inch pieces.
- Press down on each piece with a fork to create texture.
- Boil water in a pot and drop the gnocchi in; they are ready when they float to the top.
- Optionally, sauté the cooked gnocchi in a pan with a little oil for a crispier texture.
- Serve with your choice of sauce.
