Vegan Gnocchi

Ingredients

  • 1 cup cooked sweet potato
  • ½ cup fine grained almond flour
  • ¼ cup brown rice flour
  • ¼ cup tapioca starch
  • ¼ teaspoon garlic powder
  • ¼ teaspoon sea salt

Instructions

  1. Mix all ingredients in a bowl until a dough forms.
  2. Divide the dough into 4 parts and roll each into long pieces about ½ to ¾ inch thick.
  3. Cut the rolled dough into 1 inch pieces.
  4. Press down on each piece with a fork to create texture.
  5. Boil water in a pot and drop the gnocchi in; they are ready when they float to the top.
  6. Optionally, sauté the cooked gnocchi in a pan with a little oil for a crispier texture.
  7. Serve with your choice of sauce.
