Instructions
- Steam the cauliflower rice for 2-3 minutes until tender, then drain and remove excess moisture.
- In a large bowl, mix the cauliflower with almond flour, egg yolks, and parmesan cheese.
- Melt the mozzarella cheese in a separate bowl and combine it with the cauliflower mixture.
- Form the mixture into 4 balls, cover, and refrigerate for 10 minutes.
- Roll each ball into a thin log, slice into bite-sized pieces, and press with a fork.
- Refrigerate the shaped gnocchi for 20 minutes.
- Boil salted water and cook the gnocchi for 1 minute.
- Drain and serve with your favorite sauce.
