Ingredients

  • 3 cups cauliflower rice
  • 2 large egg yolks
  • 1 cup parmesan cheese, grated
  • 6 tablespoons almond flour
  • 2 cups shredded mozzarella cheese

Instructions

  1. Steam the cauliflower rice for 2-3 minutes until tender, then drain and remove excess moisture.
  2. In a large bowl, mix the cauliflower with almond flour, egg yolks, and parmesan cheese.
  3. Melt the mozzarella cheese in a separate bowl and combine it with the cauliflower mixture.
  4. Form the mixture into 4 balls, cover, and refrigerate for 10 minutes.
  5. Roll each ball into a thin log, slice into bite-sized pieces, and press with a fork.
  6. Refrigerate the shaped gnocchi for 20 minutes.
  7. Boil salted water and cook the gnocchi for 1 minute.
  8. Drain and serve with your favorite sauce.
