Ingredients

The gnocchi

  • 3 pounds cauliflower florets
  • 1 cup white whole wheat flour
  • 1 teaspoon kosher salt
  • to taste none olive oil spray

The sauce

  • 2 cups marinara sauce
  • to taste none grated Parmesan cheese
  • to taste none basil

Instructions

  1. Boil cauliflower in a large pot of water until very soft, then drain and cool.
  2. Squeeze out excess water from the cooled cauliflower using a dish towel.
  3. Mix the drained cauliflower with flour and salt to form a dough.
  4. Divide the dough into 8 pieces and roll each into a rope, then cut into gnocchi pieces.
  5. Pan-fry the gnocchi in batches with olive oil spray until golden brown.
  6. Combine cooked gnocchi with marinara sauce and serve with optional cheese and basil.
