Homemade Cauliflower Gnocchi

Instructions
- 1. Boil water in a pot and cook the cauliflower for 5-8 minutes until tender, then drain.
- 2. Cool the cauliflower on a towel for 5-10 minutes and squeeze out excess water.
- 3. Process the cauliflower in a food processor until crumbly, then add flour and salt, and pulse until a soft dough forms.
- 4. On a floured surface, divide the dough into 4 sections, roll each into a rope, and cut into gnocchi pieces.
- 5. Heat oil in a skillet over medium heat and cook the gnocchi until browned, adding a splash of water to steam them through.
- 6. Add your choice of sauce to the pan with the gnocchi and toss to combine.
