Ingredients

  • 15 ounces cauliflower florets
  • ½ teaspoon kosher salt
  • 2 Tablespoons olive oil
  • ½ cup cassava flour or gluten free oat flour
  • 4 Tablespoons potato starch
  • ½ teaspoon garlic powder (optional)

Instructions

  1. Steam the cauliflower until tender, then remove excess water.
  2. Blend the cauliflower until riced, then add salt and oil, and blend into a puree.
  3. Combine the flours and garlic powder in a bowl, then mix with the cauliflower puree.
  4. Knead the mixture into a soft dough and chill for 15-20 minutes.
  5. Roll the dough into logs and cut into gnocchi pieces.
  6. Create ridges on the gnocchi using a fork.
  7. Choose a cooking method: bake, air fry, or boil.
  8. After cooking, toss gnocchi with sauce and simmer for 5 minutes before serving.
