Instructions
- Steam the cauliflower florets until tender.
- Drain the cauliflower and squeeze out excess moisture using a towel.
- Blend the drained cauliflower in a food processor until smooth.
- Add flour, potato starch, and salt to the cauliflower and pulse to combine.
- Shape the dough into logs and cut into gnocchi pieces.
- Boil salted water and cook the gnocchi until they float, then drain.
- Fry the gnocchi in olive oil with rosemary until browned and crisp.
- Serve with your favorite sauce.
