Ingredients

The gnocchi

  • 1 pound cauliflower
  • 3 tablespoons olive oil
  • ½ cup all-purpose flour
  • ¼ cup potato starch
  • teaspoon salt

For frying

  • 2 tablespoons olive oil
  • 1 ½ teaspoons dried rosemary

Instructions

  1. Steam the cauliflower florets until tender.
  2. Drain the cauliflower and squeeze out excess moisture using a towel.
  3. Blend the drained cauliflower in a food processor until smooth.
  4. Add flour, potato starch, and salt to the cauliflower and pulse to combine.
  5. Shape the dough into logs and cut into gnocchi pieces.
  6. Boil salted water and cook the gnocchi until they float, then drain.
  7. Fry the gnocchi in olive oil with rosemary until browned and crisp.
  8. Serve with your favorite sauce.
