Cauliflower Gnocchi

Ingredients

  • 1 head Cauliflower (~24 oz, cut into florets)
  • 1 cup Wholesome Yum Blanched Almond Flour
  • ¾ tsp Sea salt
  • 2 ½ cups Mozzarella cheese (shredded)
  • 2 tbsp Olive oil

Instructions

  1. 1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. 2. Steam the cauliflower in a pot until fork tender, about 6-8 minutes.
  3. 3. Dry the cauliflower and pulse it in a food processor until it resembles fine cauliflower rice.
  4. 4. In a bowl, mix the riced cauliflower with almond flour and sea salt until combined.
  5. 5. Melt the mozzarella cheese in a separate bowl and mix it into the cauliflower mixture until smooth.
  6. 6. Scoop and roll the mixture into oval shapes, placing them on the lined baking sheet, and freeze for 10 minutes.
  7. 7. Bake the gnocchi for 15-20 minutes until firm but not golden brown.
  8. 8. Heat olive oil in a skillet and sauté the gnocchi in batches until crispy and golden brown.
