Cauliflower Gnocchi

Instructions
- 1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- 2. Steam the cauliflower in a pot until fork tender, about 6-8 minutes.
- 3. Dry the cauliflower and pulse it in a food processor until it resembles fine cauliflower rice.
- 4. In a bowl, mix the riced cauliflower with almond flour and sea salt until combined.
- 5. Melt the mozzarella cheese in a separate bowl and mix it into the cauliflower mixture until smooth.
- 6. Scoop and roll the mixture into oval shapes, placing them on the lined baking sheet, and freeze for 10 minutes.
- 7. Bake the gnocchi for 15-20 minutes until firm but not golden brown.
- 8. Heat olive oil in a skillet and sauté the gnocchi in batches until crispy and golden brown.
