Gluten-Free Baked Gnocchi

chopped uncured bacon or turkey bacon

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet.
- In a bowl or bag, combine gnocchi, kale, bacon, and garlic.
- Drizzle with olive oil, balsamic vinegar, salt, and pepper, then mix well.
- Spread the mixture on the baking sheet in an even layer.
- Bake for 15 to 20 minutes, stirring halfway through, until the gnocchi are plump and bacon is cooked.
- Remove from the oven, sprinkle with cheese, and optionally return to the oven to melt the cheese.
- Garnish with thyme if desired and serve warm.
