Instructions
- Grease a 9x13-inch baking dish and arrange the bread cubes in an even layer at the bottom.
- Heat olive oil in a skillet, add sausage and optional seasoning, and cook until browned.
- Add onion, garlic, bell peppers, mushrooms, and spinach to the skillet and cook until softened.
- Spread the sausage and vegetable mixture over the bread cubes in the baking dish.
- Whisk together eggs, salt, pepper, milk, and cheese, then pour over the sausage and vegetable layer.
- Cover the dish and refrigerate for at least 30 minutes or up to 24 hours.
- Preheat the oven to 375°F (191°C) and bake uncovered for 40-45 minutes until golden brown.
- Cool for 10 minutes before slicing and serving.
