Ingredients

The base

  • 4 cups cubes of crusty bread

The meat and vegetables

  • 1 pound ground pork sausage
  • 1 teaspoon olive oil
  • 3/4 cup chopped yellow onion
  • 2 cloves garlic
  • 2 cups chopped bell peppers
  • 1 cup sliced mushrooms
  • 1 cup roughly chopped fresh spinach

The egg mixture

  • 12 large eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2/3 cup milk or half-and-half
  • 1 cup shredded cheddar cheese

Optional garnishes

  • to taste green onion
  • to taste chopped parsley

Instructions

  1. Grease a 9x13-inch baking dish and arrange the bread cubes in an even layer at the bottom.
  2. Heat olive oil in a skillet, add sausage and optional seasoning, and cook until browned.
  3. Add onion, garlic, bell peppers, mushrooms, and spinach to the skillet and cook until softened.
  4. Spread the sausage and vegetable mixture over the bread cubes in the baking dish.
  5. Whisk together eggs, salt, pepper, milk, and cheese, then pour over the sausage and vegetable layer.
  6. Cover the dish and refrigerate for at least 30 minutes or up to 24 hours.
  7. Preheat the oven to 375°F (191°C) and bake uncovered for 40-45 minutes until golden brown.
  8. Cool for 10 minutes before slicing and serving.
