Sourdough Breakfast Casserole

Instructions
- Preheat the oven to 350°F and coat a 9x13 baking dish with cooking spray.
- In a skillet, heat olive oil over medium heat, then sauté the onion for 3-4 minutes.
- Add the breakfast sausage and cook until browned, breaking it into pieces, for about 6-7 minutes.
- Stir in the greens, roasted red pepper (if using), and garlic, sautéing until the greens are wilted.
- In a large bowl, whisk together the eggs, milk, Greek yogurt, Dijon mustard, salt, black pepper, and red pepper flakes.
- Add the sourdough bread cubes, sausage mixture, and diced cheese to the bowl, tossing to combine.
- Transfer the mixture to the greased baking dish and spread it evenly.
- Bake for 35-45 minutes until set, and a knife inserted into the center comes out clean.
- Slice and serve.
