Ingredients

The base

  • 24 ounces frozen tater tots

The meat and vegetables

  • 12 to 16 ounces breakfast sausage
  • 1 cup small diced bell peppers
  • ½ cup small diced onion

The egg mixture

  • 6 large eggs
  • 1 cup milk
  • ½ cup sour cream
  • ½ teaspoon salt
  • a pinch black pepper

The cheese

  • 1 cup grated cheddar cheese
  • 1 cup grated Monterey Jack cheese

For garnish and serving

  • to taste chopped green onion or chives
  • to taste sour cream
  • to taste salsa

Instructions

  1. Cook the sausage, peppers, and onions in a skillet until the sausage is no longer pink and the vegetables are tender.
  2. In a bowl, whisk together the eggs, milk, sour cream, salt, and pepper until smooth.
  3. Grease a 9x13-inch baking pan and layer the tater tots in a single layer at the bottom.
  4. Sprinkle the cooked sausage and vegetables over the tater tots, followed by the cheese.
  5. Pour the egg mixture evenly over the top and cover with greased foil. Refrigerate overnight or bake immediately.
  6. Preheat the oven to 350°F. Bake covered for 25 minutes, then uncover and bake for an additional 20-25 minutes until golden and set.
  7. Garnish with green onions or chives if desired and serve warm.
