Instructions
- Cook the sausage, peppers, and onions in a skillet until the sausage is no longer pink and the vegetables are tender.
- In a bowl, whisk together the eggs, milk, sour cream, salt, and pepper until smooth.
- Grease a 9x13-inch baking pan and layer the tater tots in a single layer at the bottom.
- Sprinkle the cooked sausage and vegetables over the tater tots, followed by the cheese.
- Pour the egg mixture evenly over the top and cover with greased foil. Refrigerate overnight or bake immediately.
- Preheat the oven to 350°F. Bake covered for 25 minutes, then uncover and bake for an additional 20-25 minutes until golden and set.
- Garnish with green onions or chives if desired and serve warm.
