Instructions
- Preheat the oven to 400°F and prepare a 9x13-inch baking dish with cooking spray.
- In a skillet, cook the onion, bell pepper, and sausage until the vegetables are tender and the sausage is cooked through, then season with spices and stir in chopped bacon.
- Transfer the mixture to the baking dish, add half the cheese and the frozen tater tots, and mix well.
- In a bowl, whisk together the eggs and milk, season, and pour over the mixture in the baking dish.
- Top with the remaining cheese and bacon, then bake for 25-35 minutes until set and golden.
- Optionally, broil for 1-2 minutes for a crispy topping before serving.
