Ingredients

The base

  • 1 lb ground breakfast sausage
  • 1 medium yellow onion, diced
  • 1 large green bell pepper, diced
  • 6 slices cooked bacon, chopped
  • 1 28-ounce or two 16-ounce package frozen tater tots

The mixture

  • 6 large eggs
  • cups milk
  • 2 cups shredded cheese (Colby-Cheddar or Colby-Jack)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon fine salt

Optional toppings

  • to taste sour cream
  • to taste sliced green onions
  • to taste hot sauce
  • to taste additional bacon

Instructions

  1. Preheat the oven to 400°F and prepare a 9x13-inch baking dish with cooking spray.
  2. In a skillet, cook the onion, bell pepper, and sausage until the vegetables are tender and the sausage is cooked through, then season with spices and stir in chopped bacon.
  3. Transfer the mixture to the baking dish, add half the cheese and the frozen tater tots, and mix well.
  4. In a bowl, whisk together the eggs and milk, season, and pour over the mixture in the baking dish.
  5. Top with the remaining cheese and bacon, then bake for 25-35 minutes until set and golden.
  6. Optionally, broil for 1-2 minutes for a crispy topping before serving.
