Tater Tot Breakfast Casserole

shredded pepper jack or cheddar cheese
Instructions
- Preheat the oven to 350°F and prepare a baking dish if not using a cast iron skillet.
- Cook the sausage in a skillet until browned and crumbly, then drain the fat.
- Stir in ¼ of the tater tots and 1½ cups of cheese into the sausage mixture.
- Transfer the mixture to a greased 9x13 baking dish if not using a skillet.
- In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
- Pour the egg mixture over the sausage mixture and evenly layer the remaining tater tots on top.
- If not baking immediately, cover and refrigerate.
- Bake uncovered for 60 minutes or until the eggs are set.
- Sprinkle the remaining ½ cup of cheese on top and return to the oven for about 5 minutes until melted.
- Garnish with green onions and serve hot.
