Ingredients

  • 2 pounds breakfast sausage
  • 30-32 ounces frozen tater tots
  • 8 large eggs
  • 2 cups milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups shredded pepper jack or cheddar cheese

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish if not using a cast iron skillet.
  2. Cook the sausage in a skillet until browned and crumbly, then drain the fat.
  3. Stir in ¼ of the tater tots and 1½ cups of cheese into the sausage mixture.
  4. Transfer the mixture to a greased 9x13 baking dish if not using a skillet.
  5. In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  6. Pour the egg mixture over the sausage mixture and evenly layer the remaining tater tots on top.
  7. If not baking immediately, cover and refrigerate.
  8. Bake uncovered for 60 minutes or until the eggs are set.
  9. Sprinkle the remaining ½ cup of cheese on top and return to the oven for about 5 minutes until melted.
  10. Garnish with green onions and serve hot.
