Ingredients

Main Ingredients

  • ¼ lb Bacon, cooked and chopped
  • 1 lb Breakfast Sausage (or diced leftover ham)
  • ½ sm Onion, diced
  • 32 oz Tater Tots (thawed or pre-baked for 10 minutes)
  • 12 Eggs
  • ¾ cup Milk
  • ½ tsp Pepper
  • ½ tsp Garlic Powder
  • 1 cup Monterey Jack Cheese, shredded
  • 2 cups Cheddar Cheese, shredded

Garnishes

  • Green Onions, sliced
  • Sour Cream
  • Salsa
  • Hot Sauce

Instructions

  1. Cook the bacon and set aside to drain and cool.
  2. Cook the sausage and onion together, then drain the grease and let cool.
  3. Preheat the oven to 350°F.
  4. Line the bottom of a 9"x13" baking dish with tater tots.
  5. In a mixing bowl, beat together the eggs and milk.
  6. Add pepper, garlic powder, and Monterey Jack cheese to the egg mixture and mix well.
  7. Pour the egg mixture over the tater tots in the baking dish.
  8. Spread the sausage and onion mixture evenly over the top.
  9. Sprinkle the bacon and cheddar cheese on top.
  10. Bake for 35 to 50 minutes, or until the eggs in the center are set.
  11. Serve with your choice of garnishes.
