How To Cook Dried Chickpeas

Instructions
- Soak chickpeas overnight or use the quick soak method by boiling them for 5 minutes and letting them sit covered for 1 hour.
- After soaking, rinse and drain the chickpeas.
- Place the chickpeas in a pot and cover with water, about 3 inches above the beans.
- Bring to a boil, then lower to a simmer and cook for 30-60 minutes, checking for tenderness.
- For pressure cooking, use 6 cups of water per pound of chickpeas, cooking for 12 minutes if soaked or 50 minutes if not soaked.
- For slow cooking, combine chickpeas with 3½ cups of water and cook on high for 3-4 hours or low for 7-8 hours.
