  • 1 cup dried chickpeas
  • water for soaking and cooking

Optional Flavorings

  • 2-3 cloves garlic
  • 1 leaf bay leaf
  • ½ onion chopped
  • to taste jalapeños or chipotles
  • to taste sea salt

Instructions

  1. Soak chickpeas overnight or use the quick soak method by boiling them for 5 minutes and letting them sit covered for 1 hour.
  2. After soaking, rinse and drain the chickpeas.
  3. Place the chickpeas in a pot and cover with water, about 3 inches above the beans.
  4. Bring to a boil, then lower to a simmer and cook for 30-60 minutes, checking for tenderness.
  5. For pressure cooking, use 6 cups of water per pound of chickpeas, cooking for 12 minutes if soaked or 50 minutes if not soaked.
  6. For slow cooking, combine chickpeas with 3½ cups of water and cook on high for 3-4 hours or low for 7-8 hours.
