Ingredients

The chickpeas

  • 1 lb. dried chickpeas

The flavorings

  • ½ small onion onion, halved
  • 1 leaf bay leaf
  • 2 teaspoons kosher salt
  • 1 teaspoon crushed red pepper flakes
  • ¼ cup olive oil

Instructions

  1. Place all ingredients into the slow cooker.
  2. Cover with 8 cups of water and cover the pot.
  3. Cook on high heat for 8 to 10 hours, checking for doneness at the 4-hour mark.
  4. Once cooked, taste for salt and adjust as necessary.
  5. Store the beans in their cooking liquid in containers.
