Ingredients

The beans

  • 1 lb dried chickpeas or beans

The seasoning and aromatics

  • 3 tablespoons kosher salt
  • 1.5 teaspoons kosher salt
  • 1 small onion, halved through the core
  • 1 leaf bay leaf
  • 1/4 cup olive oil
  • a few sprigs thyme (optional)
  • 1 clove garlic, smashed (optional)
  • 1 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Soak the dried chickpeas or beans in a large bowl of water with salt for at least 8 to 10 hours.
  2. Drain and rinse the beans, then place them in a pot with the remaining salt and other ingredients.
  3. Cover the beans with water and bring to a boil.
  4. Reduce the heat and simmer for about 45 minutes, adding water as needed to keep the beans submerged.
  5. Once cooked, let the beans cool in their cooking liquid and store them as desired.
