How to Cook Beans

Instructions
- Pick over the dried beans to remove any stones or debris.
- Soak the beans in a large bowl covered with 2 to 3 inches of water for at least 8 hours or overnight.
- Drain and rinse the soaked beans.
- Transfer the beans to a large pot and cover with 2 inches of water.
- Bring the water to a gentle boil, then reduce heat and simmer uncovered for 30 minutes, skimming off any foam.
- Add sea salt and any desired aromatics, then continue simmering until the beans are tender, checking every 30 minutes.
- Once tender, discard the aromatics and season to taste with more salt and pepper.
- Store cooked beans in the fridge for up to 5 days or freeze for several months.
