Ingredients

The beans

  • 2 cups dried beans

The cooking liquid

  • 2 to 3 inches water
  • to taste teaspoon sea salt

Optional aromatics

  • as desired onion quarters or halved shallots
  • as desired garlic cloves, smashed or sliced
  • as desired scrap veggies like scallion tops or fennel fronds
  • as desired desired spices like bay leaves or peppercorns

Instructions

  1. Pick over the dried beans to remove any stones or debris.
  2. Soak the beans in a large bowl covered with 2 to 3 inches of water for at least 8 hours or overnight.
  3. Drain and rinse the soaked beans.
  4. Transfer the beans to a large pot and cover with 2 inches of water.
  5. Bring the water to a gentle boil, then reduce heat and simmer uncovered for 30 minutes, skimming off any foam.
  6. Add sea salt and any desired aromatics, then continue simmering until the beans are tender, checking every 30 minutes.
  7. Once tender, discard the aromatics and season to taste with more salt and pepper.
  8. Store cooked beans in the fridge for up to 5 days or freeze for several months.
