Instructions
- Pick through the black beans for debris and rinse them well.
- In a large pot, combine the beans, onion, garlic, bay leaves, olive oil, salt, cumin, orange zest, red pepper flakes, and water.
- Cover the pot and bring the mixture to a boil, then reduce the heat to maintain a gentle simmer.
- Cook the beans uncovered for about 1 hour, stirring occasionally.
- Test the beans for tenderness, continuing to cook if necessary, checking every 15 to 30 minutes.
- Once the beans are tender, you can reduce the cooking liquid to a gravy-like consistency if desired.
- Remove the pot from heat, discard the bay leaves and orange zest, and mash the garlic into the beans.
- Stir in cilantro and lime juice, adjusting seasoning with salt if needed.
