  • ½ teaspoon red pepper flakes
  • 8 cups water
  • 2 tablespoons finely chopped cilantro (optional)
  • 1 tablespoon lime juice

Instructions

  1. Pick through the black beans for debris and rinse them well.
  2. In a large pot, combine the beans, onion, garlic, bay leaves, olive oil, salt, cumin, orange zest, red pepper flakes, and water.
  3. Cover the pot and bring the mixture to a boil, then reduce the heat to maintain a gentle simmer.
  4. Cook the beans uncovered for about 1 hour, stirring occasionally.
  5. Test the beans for tenderness, continuing to cook if necessary, checking every 15 to 30 minutes.
  6. Once the beans are tender, you can reduce the cooking liquid to a gravy-like consistency if desired.
  7. Remove the pot from heat, discard the bay leaves and orange zest, and mash the garlic into the beans.
  8. Stir in cilantro and lime juice, adjusting seasoning with salt if needed.
