dried chickpeas (garbanzo beans)

Split Peas

green split peas

cups
water or vegetable broth
Salt
to taste
Instructions
Soak the beans using either the quick soak method or the overnight soak method.
For quick soak, boil the beans with water for 2 minutes, then cover for 1 hour.
For overnight soak, cover rinsed beans with water and let sit for 6-8 hours.
For stovetop cooking, add soaked beans to a pot with water and salt, then simmer until tender.
For chickpeas, cook soaked chickpeas in a pot with water for about 70 minutes.
For split peas, bring to a boil with water or broth, then simmer until tender.
For Instant Pot, cook soaked beans or chickpeas on high pressure for specified times.
Allow natural release for beans and chickpeas before quick release.
