Ingredients

The beans

  • 2 cups dried black beans

The cooking liquid and seasonings

  • 8 cups water
  • 2 teaspoons ground cumin
  • 1 teaspoon extra-virgin olive oil
  • 2 teaspoons sea salt
  • 1 piece kombu (optional)
  • 3 cloves garlic
  • to taste freshly ground black pepper

Optional add-ins

  • to taste chili powder
  • to taste Mexican oregano
  • to taste lime juice and zest
  • to taste chopped fresh cilantro

Instructions

  1. Sort and rinse the beans, discarding any stones or debris.
  2. Transfer the beans to a large pot and add water, cumin, olive oil, salt, and pepper.
  3. Bring the mixture to a boil, then reduce the heat and add kombu if using.
  4. Simmer uncovered, checking for tenderness starting at 1 hour and every 15 minutes thereafter, adding more water as needed.
  5. Remove the kombu and add grated garlic during the last few minutes of cooking.
  6. Season the beans to taste with additional salt, pepper, and optional spices before serving.
