How to Cook Black Beans

Instructions
- Sort and rinse the beans, discarding any stones or debris.
- Transfer the beans to a large pot and add water, cumin, olive oil, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and add kombu if using.
- Simmer uncovered, checking for tenderness starting at 1 hour and every 15 minutes thereafter, adding more water as needed.
- Remove the kombu and add grated garlic during the last few minutes of cooking.
- Season the beans to taste with additional salt, pepper, and optional spices before serving.
