Ingredients

The beans

  • 1 cup dry black beans

The aromatics

  • 2 teaspoons olive oil
  • ½ cup diced red onion
  • ½ teaspoon salt
  • 3 cloves garlic

The liquid

  • cups vegetable broth or water

The spices

  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon dry oregano
  • ¼ cup chopped fresh cilantro

The garnish

  • 1 medium lime

Instructions

  1. Rinse the dry black beans and remove any debris.
  2. Select 'sauté' on the Instant Pot and heat the olive oil.
  3. Add the onions and salt, sautéing until softened and golden.
  4. Add the minced garlic and sauté until golden and aromatic.
  5. Deglaze the pot with a splash of vegetable broth and stir in the spices.
  6. Add the black beans and remaining vegetable broth, then seal the lid.
  7. Cook on high pressure for 30 minutes, then allow natural pressure release.
  8. Once done, check the beans for tenderness and squeeze in lime juice before serving.
