Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon ground oregano
  • 1 bay leaf
  • 1 teaspoon salt, plus more to taste
  • 1 pound dry black beans
  • 5 cups water
  • to taste fresh lime juice

Instructions

  1. 1. Press the Sauté button on the Instant Pot and heat the bottom.
  2. 2. Add olive oil and chopped onion, stirring until softened.
  3. 3. Stir in garlic, cumin, and oregano, then cancel the Sauté mode.
  4. 4. Add ½ cup of water to deglaze the pot, scraping any brown bits.
  5. 5. Add the remaining 4½ cups of water, black beans, bay leaf, and salt.
  6. 6. Secure the lid and set the steam release valve to Sealing.
  7. 7. Cook at high pressure for 50 minutes (or 9 minutes for soaked beans).
  8. 8. Allow the pressure to naturally release for 10 minutes (or 15 for soaked beans).
  9. 9. Release any remaining pressure and open the lid safely.
  10. 10. Remove the bay leaf and test beans for tenderness.
  11. 11. If there's excess liquid, press Sauté and simmer uncovered for 10-15 minutes.
  12. 12. Season with additional salt and lime juice, then serve warm.
