Instant Pot Black Beans

Instructions
- 1. Press the Sauté button on the Instant Pot and heat the bottom.
- 2. Add olive oil and chopped onion, stirring until softened.
- 3. Stir in garlic, cumin, and oregano, then cancel the Sauté mode.
- 4. Add ½ cup of water to deglaze the pot, scraping any brown bits.
- 5. Add the remaining 4½ cups of water, black beans, bay leaf, and salt.
- 6. Secure the lid and set the steam release valve to Sealing.
- 7. Cook at high pressure for 50 minutes (or 9 minutes for soaked beans).
- 8. Allow the pressure to naturally release for 10 minutes (or 15 for soaked beans).
- 9. Release any remaining pressure and open the lid safely.
- 10. Remove the bay leaf and test beans for tenderness.
- 11. If there's excess liquid, press Sauté and simmer uncovered for 10-15 minutes.
- 12. Season with additional salt and lime juice, then serve warm.
