Ingredients

The beans

  • 2 cups dried black beans
  • 6 cups water

The aromatics and spices

  • ½ cup diced white onion
  • 2 large cloves garlic
  • 2 teaspoons sea salt
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • to taste freshly ground black pepper
  • to taste fresh lime juice (optional)

Instructions

  1. 1. Rinse and sort the black beans to remove any stones or debris.
  2. 2. Add the rinsed beans to the Instant Pot along with water, onion, garlic, salt, chili powder, cumin, oregano, and black pepper.
  3. 3. Secure the lid and set the Instant Pot to Pressure Cook on High for 25 minutes (or 20 minutes for firmer beans).
  4. 4. Allow the pressure to release naturally for about 20 to 30 minutes.
  5. 5. Once the float valve drops, remove the lid and season the beans to taste with salt, pepper, and lime juice if desired.
