Ingredients

The beans

  • 1 pound dried black beans

The aromatics

  • 1 tablespoon oil
  • ½ medium white onion
  • 4 cloves garlic

The liquid

  • 5 cups water or stock

The seasoning

  • 1 tablespoon seasoning
  • to taste salt

Instructions

  1. If soaking, soak beans overnight in cool water for 10-12 hours and drain.
  2. Set Instant Pot to Saute mode, add oil, garlic, and onion, and saute until softened.
  3. Add water or stock and black beans, secure the lid.
  4. For unsoaked beans, cook on manual high pressure for 35 minutes; for soaked beans, cook for 8 minutes.
  5. Do not release pressure immediately; let it naturally release until the pin drops.
  6. Stir in seasoning and salt to taste after natural release.
