Ingredients

The beans

  • 1 pound dry black beans
  • 4 cups water

The aromatics and seasoning

  • 2 tablespoons oil
  • 1 medium onion, diced
  • 2 teaspoons minced garlic
  • ¼ cup green bell pepper, diced
  • ¼ cup red bell pepper, diced
  • 2 teaspoons Creole seasoning
  • 1 teaspoon cumin
  • 2 teaspoons oregano
  • 2 teaspoons salt, to taste
  • 2 teaspoons white pepper
  • 1 ½ teaspoons ground black pepper

Instructions

  1. Remove any foreign objects from the beans, wash them, and set aside.
  2. Press the 'Saute' function on the Instant Pot and heat for about 3 minutes.
  3. Add oil to the pot once it starts to sizzle.
  4. Add onion, garlic, and bell peppers, stirring for about 3-4 minutes.
  5. Add Creole seasoning, cumin, oregano, salt, and pepper, stirring for another 2-3 minutes.
  6. Add the beans and water, then close the Instant Pot and set the valve to 'Sealing'.
  7. Press the 'Pressure Cook' button, select 'High Pressure', and set the time for 30 minutes.
  8. Let the pressure release naturally for 10 minutes, then manually release the remaining pressure.
  9. Adjust the consistency as desired and serve with rice.
