Instructions
- Preheat the oven to 400°F and coat a baking dish with cooking spray.
- Tuck the wings of each hen underneath and stuff the cavities with rosemary, thyme, onion, and lemon.
- Tie the legs of the hens together with kitchen twine.
- Mix butter, garlic, minced thyme, rosemary, parsley, salt, and pepper in a bowl.
- Rub the butter mixture all over the hens, including under the skin.
- Place the hens in the prepared dish and bake for 50-60 minutes until the internal temperature reaches 165°F.
- If the skin darkens too much, cover with foil.
- Let the hens rest for 5 minutes, remove the stuffing, cut in half, and serve with pan drippings and garnish if desired.
