Roasted Cornish Hen

Ingredients

The hens

  • 2 each Cornish hens
  • 1.5 – 2 pounds each hen

The aromatics

  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • ½ small onion
  • ½ each lemon

The butter mixture

  • 6 tablespoons butter
  • 2 teaspoons garlic
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh rosemary leaves
  • 2 teaspoons fresh parsley leaves
  • to taste salt
  • to taste black pepper

For cooking

  • as needed cooking spray
  • optional herb sprigs and lemon wedges for garnish

Instructions

  1. Preheat the oven to 400°F and coat a baking dish with cooking spray.
  2. Tuck the wings of each hen underneath and stuff the cavities with rosemary, thyme, onion, and lemon.
  3. Tie the legs of the hens together with kitchen twine.
  4. Mix butter, garlic, minced thyme, rosemary, parsley, salt, and pepper in a bowl.
  5. Rub the butter mixture all over the hens, including under the skin.
  6. Place the hens in the prepared dish and bake for 50-60 minutes until the internal temperature reaches 165°F.
  7. If the skin darkens too much, cover with foil.
  8. Let the hens rest for 5 minutes, remove the stuffing, cut in half, and serve with pan drippings and garnish if desired.
