Ingredients

The marinade

  • 1 whole Cornish hen
  • 4 cloves garlic
  • 3 pieces toothpicks
  • 1 tablespoon olive oil or unsalted butter
  • 1 tablespoon honey
  • ½ tablespoon sambal oelek
  • 1 teaspoon salt

For serving

  • to taste lemon wedges

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse and pat dry the Cornish hen, ensuring the cavity is dry.
  3. Place the garlic inside the cavity and secure it with toothpicks.
  4. In a small bowl, mix olive oil (or butter), honey, sambal oelek, and salt.
  5. Brush the mixture evenly over the skin of the hen.
  6. Place the hen on a roasting pan and bake for 30 minutes until the skin is crispy.
  7. Turn the hen over and bake for another 30 minutes, brushing the juices onto the skin.
  8. Remove from the oven and serve immediately with lemon wedges.
