Ingredients

The Cornish Hen

The Aromatics

  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 small lemon (sliced)
  • 1 ½ tablespoons olive oil

The Dry Rub

  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ tablespoon Italian seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 210°C (425°F).
  2. Combine the dry rub ingredients in a small bowl.
  3. Pat the Cornish hen dry and season generously with the spice rub.
  4. Place rosemary, thyme, and lemon slices in a roasting pan.
  5. Add the Cornish hen to the pan and drizzle with olive oil.
  6. Roast the hen for 1 hour or until the internal temperature reaches 165°F.
  7. Let the hen rest for 20 minutes before serving.
