Instructions
- Preheat the oven to 210°C (425°F).
- Combine the dry rub ingredients in a small bowl.
- Pat the Cornish hen dry and season generously with the spice rub.
- Place rosemary, thyme, and lemon slices in a roasting pan.
- Add the Cornish hen to the pan and drizzle with olive oil.
- Roast the hen for 1 hour or until the internal temperature reaches 165°F.
- Let the hen rest for 20 minutes before serving.
