The stuffing

unsalted butter
Instructions
- Preheat the oven to 425°F.
- Pat the Cornish hens dry with paper towels.
- Mix the seasonings in a small bowl.
- Place a wire rack on a baking sheet lined with foil or parchment paper and spray it with cooking spray or olive oil.
- Stuff the hens with lemon quarters and any fresh herbs.
- Rub the seasoning mixture onto all sides of the hens.
- Let the hens sit at room temperature for about 30 minutes.
- Place the hens in the oven and cook for 30 minutes.
- Lower the oven temperature to 350°F and continue cooking for another 30 minutes.
- Baste the hens with butter and cook until they reach an internal temperature of 165°F (about 10-15 minutes).
- Remove from the oven and let rest for 15 minutes before serving.
