Instant Pot Bone-In Turkey Breast

Ingredients

The turkey

  • 1 5 to 7 pound bone-in turkey breast

The seasoning

  • ¼ cup avocado oil or vegetable oil
  • 1 tablespoon maple syrup
  • 1 ½ teaspoons sea salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • 1 whole lemon (zested and halved)
  • 1 whole onion (peeled and halved)
  • 2 cups chicken or turkey broth

For the gravy

  • ¼ cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons butter
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Pat the turkey dry and let it sit at room temperature for about an hour.
  2. Mix the oil, syrup, salt, paprika, black pepper, and lemon zest, then brush this mixture over the turkey.
  3. Stuff the turkey cavity with the onion and lemons.
  4. Add the broth to the Instant Pot and place the trivet inside. Put the turkey on top and lock the lid.
  5. Set the Instant Pot to manual high pressure for 30 minutes, then do a quick release.
  6. Preheat the oven to broil and broil the turkey skin for 3 to 5 minutes until golden brown.
  7. Transfer the turkey to a cutting board and let it rest for at least 15 minutes.
  8. While the turkey rests, mix the water and cornstarch in a bowl, then whisk it into the broth in the Instant Pot set to sauté.
  9. Add butter, salt, and pepper to the broth and cook until the gravy thickens for 5 to 7 minutes.
  10. Slice the turkey and serve with the gravy.
