Ingredients

The turkey

  • 1 6-pound turkey breast (bone-in or boneless)
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons fine sea salt
  • 2 teaspoons poultry seasoning
  • 1 cup water

Turkey Gravy (optional)

  • 2 tablespoons arrowroot starch
  • 2 tablespoons cold water
  • to taste salt & pepper

Instructions

  1. Prepare the turkey breast by removing any netting and rubbing it with olive oil, salt, and poultry seasoning.
  2. Pour water into the Instant Pot and place a trivet inside.
  3. Set the seasoned turkey breast on top of the trivet.
  4. Secure the lid and set the steam release valve to 'Sealing.' Cook at high pressure for 40 minutes.
  5. Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  6. Check the internal temperature; it should be at least 160ºF. If not, cook for an additional 5 minutes.
  7. For a golden skin, broil the turkey in the oven for up to 5 minutes, watching closely.
  8. Let the turkey rest for 20 minutes before slicing and serving.
  9. For gravy, strain the drippings, return them to the pot, and thicken with a slurry made from arrowroot and cold water.
