Ingredients

The cookie dough

  • 1 cup almond flour
  • 1 cup tahini
  • ½ cup maple syrup
  • 1 large egg
  • 1 tsp baking soda
  • 1 heaping cup dairy free chocolate chips
  • 1 scoop collagen peptides (optional)
  • to taste sea salt flakes for topping

The topping

  • ½ pint So Delicious Chocolate Chip Frozen Mousse

Instructions

  1. Preheat the oven to 350°F.
  2. Grease an 8, 9, or 10 inch cast iron skillet with coconut oil spray.
  3. In a medium bowl, mix almond flour, tahini, maple syrup, collagen peptides (if using), and chocolate chips until the dough is thick.
  4. Refrigerate the dough for 30 minutes.
  5. After chilling, add the egg and baking soda to the dough and mix until fully incorporated.
  6. Pour the dough into the greased skillet and press evenly to flatten.
  7. Bake for 15-16 minutes.
  8. Let it settle before serving, then sprinkle sea salt flakes and top with frozen mousse.
