Instructions
- Preheat the oven to 425°F and place a cast iron skillet inside to heat.
- Blend the flour, milk, orange juice, eggs, maple syrup, vanilla, orange zest, and salt until smooth.
- Let the batter rest for 5 minutes.
- Remove the hot skillet from the oven, add butter, and swirl to coat the pan.
- Add the cranberries to the skillet, then pour the batter over the cranberries.
- Bake for 15 to 20 minutes until puffed and golden brown.
- Remove from the oven and serve, optionally dusted with powdered sugar or with maple syrup.
