Ingredients

The batter

  • ½ cup all-purpose flour
  • 1 tablespoon all-purpose flour
  • cup 2% milk
  • 2 tablespoons fresh orange juice
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • ½ teaspoon fine salt

The toppings

  • 2 tablespoons unsalted butter
  • ½ cup fresh cranberries

Instructions

  1. Preheat the oven to 425°F and place a cast iron skillet inside to heat.
  2. Blend the flour, milk, orange juice, eggs, maple syrup, vanilla, orange zest, and salt until smooth.
  3. Let the batter rest for 5 minutes.
  4. Remove the hot skillet from the oven, add butter, and swirl to coat the pan.
  5. Add the cranberries to the skillet, then pour the batter over the cranberries.
  6. Bake for 15 to 20 minutes until puffed and golden brown.
  7. Remove from the oven and serve, optionally dusted with powdered sugar or with maple syrup.
