Ingredients

The pancake

  • 4 large eggs
  • 1 cup milk
  • 1 cup all purpose flour
  • ¼ cup granulated sugar
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

For serving

  • to taste fresh berries
  • to taste whipped cream
  • optional mint sprigs

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Blend the eggs, milk, flour, sugar, salt, and vanilla until smooth.
  3. Heat a 10-inch skillet over medium-high heat and melt the butter.
  4. Pour the batter into the skillet and bake until browned and puffed, about 20-25 minutes.
  5. Top with berries and whipped cream, garnish with mint if desired, then cut into wedges and serve.
