Ingredients

The pan

  • 2 tablespoons butter

The batter

  • 6 large eggs
  • 1 cup milk
  • ½ teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup natural, unsweetened cocoa or Dutch-process cocoa powder
  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt

The toppings

  • to taste sweetened whipped cream
  • to taste fresh fruit
  • to taste maple syrup

Instructions

  1. Preheat the oven to 400°F and melt butter in a glass baking dish.
  2. Blend eggs, milk, and vanilla until smooth, then add flour, cocoa, sugar, and salt, blending until just combined.
  3. Pour the batter into the hot, buttered pan and bake for 20 minutes until puffy and lightly browned.
  4. Serve immediately with whipped cream, fresh fruit, and syrup.
