Ingredients

The batter

  • 3 large eggs, at room temperature
  • 1 cup milk
  • 3 tablespoons sugar
  • 2 teaspoons vanilla extract
  • cup all-purpose flour
  • ½ teaspoon kosher salt
  • 4 tablespoons unsalted butter, cubed

The toppings

  • to taste berries (for serving)
  • to taste powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F and place the skillets inside to preheat.
  2. In a blender, combine eggs, milk, sugar, and vanilla extract; blend until smooth.
  3. Add flour and salt to the blender and pulse once more to combine.
  4. Add a tablespoon of butter to each mini skillet or all of it to a large skillet, swirling to coat the sides.
  5. Pour the batter into the skillets and bake for 20-30 minutes until puffy and golden.
  6. Remove from the oven and serve immediately, dusted with powdered sugar and topped with berries.
