Instructions
- Preheat the oven to 210C/425F and place a 10-inch cast iron skillet inside to heat.
- Blend the eggs, flour, milk, salt, and vanilla until smooth, then let the batter rest for 5 minutes.
- Remove the skillet from the oven, add the butter, and let it melt.
- Pour the pancake batter into the skillet and bake for 20-25 minutes until golden and puffed.
- Dust with powdered sugar and top with berries before serving.
