Ingredients

The batter

  • 5 large eggs
  • 1⅓ cups whole milk
  • cups all-purpose flour
  • 1 tsp. vanilla extract
  • ¼ cup pure maple syrup
  • ¾ tsp. Diamond Crystal kosher salt

The cooking

  • 3 Tbsp. unsalted butter

The topping

  • 1 cup heavy cream
  • 3 Tbsp. pure maple syrup
  • ¾ tsp. Diamond Crystal kosher salt
  • 6 oz. fresh berries

Instructions

  1. Preheat the oven to 425°F and blend the eggs until frothy.
  2. Add milk, flour, vanilla extract, maple syrup, and salt to the eggs and blend until smooth.
  3. Heat a cast-iron skillet in the oven for 10 minutes, then add butter to coat the pan.
  4. Pour the batter into the hot skillet and bake for 25-30 minutes without opening the oven door.
  5. Whisk cream, maple syrup, and salt until soft peaks form.
  6. Top the Dutch baby with whipped cream and fresh berries, and drizzle with more syrup if desired.
