Apple Dutch Baby

Ingredients

The batter

  • ½ stick unsalted butter
  • ½ cup whole or 2% milk
  • ½ cup all-purpose flour
  • 4 large eggs
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt

The topping

  • 1 large sweet apple (such as Honey Crisp), peeled and thinly sliced
  • to taste none confectioners sugar for dusting

Instructions

  1. 1. Preheat the oven to 450°F and place the oven rack in the middle position.
  2. 2. Melt the butter in a 9-inch oven-safe skillet over moderate heat, reserving 2 tablespoons in a blender or food processor.
  3. 3. Add the apple slices to the skillet and cook for 3 to 5 minutes until they begin to soften.
  4. 4. While the apples are cooking, blend the reserved butter with milk, flour, eggs, granulated sugar, vanilla, and salt until smooth.
  5. 5. Pour the batter over the softened apples in the skillet and transfer it to the oven.
  6. 6. Bake for about 15 minutes until the pancake is puffed and golden.
  7. 7. Dust with confectioners sugar and serve immediately.
