Ingredients

  • 2 cups almond flour
  • ¼ cup ground flaxseed
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp fine sea salt
  • cup pure maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup butter, melted
  • 1 tbsp organic cane sugar or turbinado sugar

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners.
  2. Melt the butter in a microwave-safe bowl.
  3. In a mixing bowl, whisk together almond flour, flaxseed, baking soda, cinnamon, and salt.
  4. Add maple syrup, eggs, vanilla, almond extract, and melted butter to the dry ingredients and mix until smooth.
  5. Fold in the blueberries gently.
  6. Spoon the batter into the muffin tin using a ¼ cup measure, filling each liner.
  7. Sprinkle sugar on top of each muffin.
  8. Bake for 20 minutes or until golden and a toothpick comes out clean.
  9. Cool on a wire rack before serving.
