Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners.
- Melt the butter in a microwave-safe bowl.
- In a mixing bowl, whisk together almond flour, flaxseed, baking soda, cinnamon, and salt.
- Add maple syrup, eggs, vanilla, almond extract, and melted butter to the dry ingredients and mix until smooth.
- Fold in the blueberries gently.
- Spoon the batter into the muffin tin using a ¼ cup measure, filling each liner.
- Sprinkle sugar on top of each muffin.
- Bake for 20 minutes or until golden and a toothpick comes out clean.
- Cool on a wire rack before serving.
