Whole Baked Sea Bass

Ingredients

The fish

  • 2 whole white fish (sea bass, red snapper, or tilapia)

The marinade

  • 1 whole lemon
  • ½ bunch parsley
  • ½ bunch basil
  • 1 small onion
  • 1 small tomato
  • 4-5 cloves garlic
  • 1 tablespoon chicken bouillon (optional)
  • ½ - 1 cup water or oil
  • 1-2 cups cherry tomatoes
  • to taste salt and pepper

Instructions

  1. Make 3-4 diagonal cuts in each side of the fish and season with lemon, salt, and pepper.
  2. Chop parsley, half of the onion, basil, tomato, and garlic, then blend with water or oil until pureed.
  3. Pour the marinade over the fish, ensuring it is coated inside and out, and let it marinate in the fridge for up to 24 hours.
  4. Preheat the oven and oil a roasting pan.
  5. Place the fish in the pan, drizzle with additional water or oil, and add cherry tomatoes and remaining onion.
  6. Bake at 450°F (232°C) for 15-20 minutes, depending on the thickness of the fish.
  7. Serve warm with plantains or potatoes.
