Instructions
- Make 3-4 diagonal cuts in each side of the fish and season with lemon, salt, and pepper.
- Chop parsley, half of the onion, basil, tomato, and garlic, then blend with water or oil until pureed.
- Pour the marinade over the fish, ensuring it is coated inside and out, and let it marinate in the fridge for up to 24 hours.
- Preheat the oven and oil a roasting pan.
- Place the fish in the pan, drizzle with additional water or oil, and add cherry tomatoes and remaining onion.
- Bake at 450°F (232°C) for 15-20 minutes, depending on the thickness of the fish.
- Serve warm with plantains or potatoes.
