Cucumber-Lime Energy Drink

Ingredients

The drink base

  • 1 cup fresh lime juice (from about 8 medium limes)
  • 1 Tbsp. sugar
  • 2 tsp. sugar
  • ½ tsp. Diamond Crystal salt
  • ¼ tsp. Morton kosher salt
  • cups water

The flavoring ingredients

  • 1 large English hothouse cucumber (about 11 oz.)
  • 1 cup coarsely chopped mint
  • optional mint sprigs for serving

Instructions

  1. Combine lime juice, sugar, salt, and water in a bowl and stir until dissolved.
  2. Cut cucumber into quarters, set one aside, and smash the remaining pieces with mint until wilted.
  3. Add smashed cucumber and mint to the lime juice mixture and let sit for 10 minutes.
  4. Strain the drink into a pitcher, pressing to extract juices and discard solids.
  5. Slice the reserved cucumber and serve the drink over ice, garnished with cucumber and mint.
