Vegan Peach Ice Cream

The fruit mixture

ripe peaches

real maple syrup

bourbon
Instructions
- Soak the cashews in water for at least 6 hours.
- In a medium bowl, mix 2 cups of diced peaches, 3 tablespoons of maple syrup, and 1 tablespoon of bourbon and let it sit for about 15 minutes.
- Remove ½ cup of the macerated peaches and set aside.
- Blend all remaining ingredients until very smooth.
- Add the reserved ½ cup of peaches and pulse a few times to leave some chunks.
- Chill the mixture until very cold, then churn and freeze according to your ice cream maker's instructions.
