Instructions
- Soak the almonds overnight and discard the soaking water.
- Blend soaked almonds and water in a Vitamix until smooth.
- Strain the almond mixture through a strainer bag, discarding the solids.
- Blend the almond mixture with peaches and dates until smooth.
- Add stevia, vanilla extract, and lemon juice to the mixture.
- Process the mixture in an ice cream maker according to the manufacturer's instructions.
