Ingredients

Crepe Ingredients

  • 6 units eggs
  • 3 cups non-dairy milk or cow’s milk
  • 4 tbsp melted butter or coconut oil

Crepe Filling for 12 Crepes

  • 2 cups chopped strawberries
  • 2 cups blueberries
  • 2 cups sliced bananas
  • optional chocolate sauce

Instructions

  1. Prepare the crepe batter the night before by combining the flour, salt, and eggs in a bowl.
  2. Gradually add the milk and melted butter or coconut oil until the mixture is smooth.
  3. Refrigerate the batter overnight.
  4. The next morning, stir the batter and heat a non-stick crepe pan over medium heat with a little oil or ghee.
  5. Pour enough batter into the pan to create a thin layer, swirling to cover the surface.
  6. Cook until the bottom is lightly browned, about 2 minutes, then flip and cook for an additional 10 seconds.
  7. Remove the crepe from the pan and repeat with the remaining batter.
  8. To serve, place the chopped fruit and chocolate sauce in the center of the table for everyone to customize their crepes.
