Banana Foster Crepes

The bananas foster

salted butter or coconut oil for dairy-free

brown sugar

cinnamon

vanilla extract

ripe bananas, sliced

vanilla ice cream or dairy-free ice cream
Instructions
- Blend flour, milk, egg, and oil in a blender until smooth.
- Heat a nonstick crepe pan on medium-low heat and spray with cooking spray.
- Pour ¼ cup of the crepe mixture into the pan and swirl to spread it thin.
- Cook for about 1 minute until the bottom is light golden brown, then flip and cook for another 30 seconds to 1 minute.
- Set the cooked crepes aside and repeat until all the mixture is used.
- In a large non-stick skillet, melt the butter over low heat.
- Add brown sugar, cinnamon, and vanilla extract, stirring until the sugar dissolves.
- Add 2 tablespoons of water, cover, and let simmer for about 2 minutes.
- Gently add the sliced bananas and cook for 2 to 3 minutes until glossy and coated.
- To serve, place ⅓ cup of the banana mixture in the center of each crepe, fold the sides over, and top with 2 tablespoons of ice cream and any pan juices.
