Banana Foster Crepes

Ingredients

The crepes

  • ½ cup all purpose or white whole wheat flour
  • ¾ cup 1% milk or milk of your choice
  • 1 large egg
  • ½ teaspoon oil (olive or grapeseed)
  • as needed none nonstick spray

The bananas foster

  • teaspoons salted butter or coconut oil for dairy-free
  • 3 tablespoons brown sugar
  • teaspoon cinnamon
  • teaspoons vanilla extract
  • 3 medium ripe bananas, sliced
  • ¾ cup vanilla ice cream or dairy-free ice cream

Instructions

  1. Blend flour, milk, egg, and oil in a blender until smooth.
  2. Heat a nonstick crepe pan on medium-low heat and spray with cooking spray.
  3. Pour ¼ cup of the crepe mixture into the pan and swirl to spread it thin.
  4. Cook for about 1 minute until the bottom is light golden brown, then flip and cook for another 30 seconds to 1 minute.
  5. Set the cooked crepes aside and repeat until all the mixture is used.
  6. In a large non-stick skillet, melt the butter over low heat.
  7. Add brown sugar, cinnamon, and vanilla extract, stirring until the sugar dissolves.
  8. Add 2 tablespoons of water, cover, and let simmer for about 2 minutes.
  9. Gently add the sliced bananas and cook for 2 to 3 minutes until glossy and coated.
  10. To serve, place ⅓ cup of the banana mixture in the center of each crepe, fold the sides over, and top with 2 tablespoons of ice cream and any pan juices.
