Bananas Foster

Ingredients

The bananas

  • 1 banana banana
  • 1 tsp coconut oil
  • 1 tsp ghee
  • a pinch Celtic salt
  • a few pinches coconut sugar

The vanilla pudding

  • ½ cup cashews
  • ½ cup coconut oil
  • ¼ cup agave
  • 1 tbsp vanilla extract
  • ½ to ¾ cup whole coconut milk

Instructions

  1. Preheat a pan on medium heat.
  2. Cut the banana into half-inch pieces.
  3. Add coconut oil and ghee to the pan.
  4. Fry the banana pieces for a couple of minutes on each side until browned.
  5. Sprinkle with Celtic salt and coconut sugar.
  6. Prepare the vanilla pudding by blending soaked cashews and liquified coconut oil until smooth.
  7. Add agave, vanilla extract, and coconut milk to the processor and blend until combined.
  8. Pour the pudding into a dish and refrigerate for at least 5 hours.
  9. Serve the fried bananas over the vanilla pudding.
