Ingredients

The bananas and sauce

  • 2 pieces bananas, sliced into medium rounds
  • 2 tablespoons grass fed butter or ghee (or coconut oil for dairy-free)
  • 1-2 tablespoons coconut or maple sugar
  • 1-2 tablespoons full fat coconut milk

The ice cream

  • 8-10 ounces full fat coconut milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 pinch sea salt

Instructions

  1. Melt the butter and coconut or maple sugar in a saucepan over medium-low heat, stirring until combined.
  2. Add 1 to 2 tablespoons of coconut milk to the mixture to create a creamy sauce and stir until smooth.
  3. Reduce the heat to low and add the banana rounds, stirring and letting it simmer.
  4. In a mixing bowl, whisk together the coconut milk, maple syrup, vanilla, and salt.
  5. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
  6. Stir the banana sauce occasionally while the ice cream churns.
  7. Once the ice cream is ready, serve by placing some bananas and sauce in a bowl, adding the ice cream, and topping with more bananas and sauce.
